- 2 lbs. lean beef stew meat
- 2 potatoes peeled and cubed
- 3 Roma tomatoes cubed
- 3 garlic cloves
- 1 red bell pepper seeded and chopped
- 1 jalapeño seeded and diced
- 1 medium onion diced
- 1 tsp. ground cumin
- 4 cups of beef broth
- 1 tbsp chile powder
- 1/4 tsp black pepper
- 2 tbsp cilantro minced
Add meat, 1 cup of water, and garlic to slow-cooker, cook on high for 2 hours
Add 2 tablespoons olive oil and saute onions for 5 minutes in a large skillet on medium heat
Remove the meat mixture from the slow cooker, and add to the skillet with onions, after 5 minutes add tomatoes. Mash tomatoes in the skillet.
Add broth, potatoes, cilantro, bell pepper, jalapeño, and spices to meat on medium-high heat for 10 minutes.
Lower heat, cover, and simmer for 20 minutes or until potatoes and beef are tender.
Season to taste with salt and pepper
