Carne Guisada con Papas (Mexican Beef Stew with Potatoes)

Ingredients
  

  • 2 lbs. lean beef stew meat
  • 2 potatoes peeled and cubed
  • 3 Roma tomatoes cubed
  • 3 garlic cloves
  • 1 red bell pepper seeded and chopped
  • 1 jalapeño seeded and diced
  • 1 medium onion diced
  • 1 tsp. ground cumin
  • 4 cups of beef broth
  • 1 tbsp chile powder
  • 1/4 tsp black pepper
  • 2 tbsp cilantro minced

Instructions
 

  • Add meat, 1 cup of water, and garlic to slow-cooker, cook on high for 2 hours
  • Add 2 tablespoons olive oil and saute onions for 5 minutes in a large skillet on medium heat
  • Remove the meat mixture from the slow cooker, and add to the skillet with onions, after 5 minutes add tomatoes. Mash tomatoes in the skillet.
  • Add broth, potatoes, cilantro, bell pepper, jalapeño, and spices to meat on medium-high heat for 10 minutes.
  • Lower heat, cover, and simmer for 20 minutes or until potatoes and beef are tender.
  • Season to taste with salt and pepper
