Chorizo, Potato, and Egg

Ingredients
  

  • 5 eggs beaten
  • 1/4 cup diced onions
  • 1 cup cubed frozen potatoes
  • 4 oz. chorizo
  • 1 tbsp olive oil
  • pinch of garlic powder
  • Salt & Pepper to taste

Instructions
 

  • Saute onions in oil on medium-high heat until translucent. Add potatoes to onions.
  • Cook chorizo in a separate skillet until cooked, approx 8 minutes. Add chorizo to onion potato mixture, stir and cook for 2 minutes. Add beaten eggs and garlic powder.
  • Let eggs set on medium heat before stirring, and cook eggs until done.
  • Serve with a tortilla, or make it into a burrito.
  • Optional: sliced avocados, queso fresco
