Saute onions in oil on medium-high heat until translucent. Add potatoes to onions.
Cook chorizo in a separate skillet until cooked, approx 8 minutes. Add chorizo to onion potato mixture, stir and cook for 2 minutes. Add beaten eggs and garlic powder.
Let eggs set on medium heat before stirring, and cook eggs until done.
