Easy Enchiladas Suizas

Ingredients
  

  • 3 cups Tomatillo Salsa homemade or store-bought
  • 1/2 cup heavy whipping cream
  • 1/2 cup Mexican crema or sour cream
  • 1/2 cup cilantro chopped
  • 1 jalapeño diced (optional)
  • 1 garlic clove
  • 2 cups coarsely shredded cooked chicken preferably grilled, roasted, or rotisserie chicken
  • 1 dozen corn tortillas
  • 2 cups Mozzarella Monterey Jack, or Oaxaca cheese
  • 1/2 onion medium red onion thinly sliced
  • Vegetable oil for frying
  • Salt and Pepper to taste

Instructions
 

  • Place 1 cup of Tomatillo salsa, Mexican Crema, heavy cream, cilantro, Jalapeño (optional), and garlic clove in a blender, and process until you have a smooth sauce. Add tomatillo cream sauce to the remaining tomatillo salsa, stir well, and set aside.
  • Preheat the oven to 375 degrees F. Heat the oil on a frying pan and using some tongs, fry each tortilla individually for 4 sec on each side, remove the tortilla from the oil, making sure it does not have too much oil.
  • Then place it into the sauce, and rub it with some sauce on both sides. Remove it from the sauce and add some shredded chicken and cheese. Roll it and place the enchilada on a 9 x 13 baking dish
  • Once all the tortillas are stuffed and onto the baking dish, add the rest of the creamy tomatillo sauce on top and then top it with the rest of the cheese.
  • Place the baking dish into the oven and bake for 20 min or until the cheese is melted.
  • Serve with rice and beans, top with sliced onions
