Easy Green Chile Pork Stew

This delicious stew is filling and easy enough to make on a weeknight, pair it up with refried beans and a flour tortilla for an easy delicious meal.

- 1 1/2 pounds pork loin cut into 1-inch cubes
- 3 potatoes peeled and cubed
- 1/2 white onion diced
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1 cup tomatillo salsa verde store-bought or homemade
- 2 cups vegetable broth
- 2 tablespoons vegetable oil
Brown the pork in the vegetable oil in a dutch oven, then remove and drain. Add the onion and garlic to the oil and sauté until soft.
Place all the ingredients in a dutch oven and simmer for 2 hours, or until the meat is very tender and starts to fall apart.
Serve as an entreé with warm flour tortillas
Salt and Pepper to taste.
