Marinade Ingredients
1/2cupolive oil
6garlic cloves minced
1tbspground cumin
1tbspkosher salt
2tspground black pepper
1tspground coriander
2tspMexican oregano
2ozachiote paste
1/2cupfresh orange juice
1/4cupfresh lime juice
1/4cupdiced white onions
Instructions
Place marinade ingredients together in a blender, or food processor. Blend until smooth. Place chicken in a large bowl, and pour marinade over the chicken.
Stir, coat the chicken and cover with a lid, or plastic wrap. Marinate chicken in the refrigerator for 1 to 4 hours.
Grilling Instructions
Grill the thawed chicken over medium-high heat for 15-20 minutes, turning it occasionally, until it is no longer pink in the center and the juices run clear. The cooking time may vary depending on the thickness of the chicken and the temperature of the grill. Internal temp should be at least 165°F.
Bake Instructions
Place the chicken on the rack and bake it at 425°F for about 25-30 minutes or until cooked through.(for a little char...broil for 5 minutes.)
