Ingredients
  

Chicken

  • 4 pounds chicken thighs (bone-in or boneless & skinless) or a cut-up whole fryer, chicken breast

Marinade Ingredients

  • 1/2 cup olive oil
  • 6 garlic cloves minced
  • 1 tbsp ground cumin
  • 1 tbsp kosher salt
  • 2 tsp ground black pepper
  • 1 tsp ground coriander
  • 2 tsp Mexican oregano
  • 2 oz achiote paste
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/4 cup diced white onions

Instructions
 

  • Place marinade ingredients together in a blender, or food processor. Blend until smooth. Place chicken in a large bowl, and pour marinade over the chicken.
  • Stir, coat the chicken and cover with a lid, or plastic wrap. Marinate chicken in the refrigerator for 1 to 4 hours.

Grilling Instructions

  • Grill the thawed chicken over medium-high heat for 15-20 minutes, turning it occasionally, until it is no longer pink in the center and the juices run clear. The cooking time may vary depending on the thickness of the chicken and the temperature of the grill. Internal temp should be at least 165°F.

Bake Instructions

  • Place the chicken on the rack and bake it at 425°F for about 25-30 minutes or until cooked through.(for a little char...broil for 5 minutes.)
