Homemade Mexican Chorizo Recipe

A mildly hot, and very delicious, Mexican sausage. Excellent for breakfast, lunch, or dinner.

Ingredients
  

  • 5 tbsp smoked paprika
  • 2 tbsp ancho chile powder
  • 1 tbsp ground cumin
  • 2 tbsp chili powder
  • 2 tsp Mexican oregano dried
  • 1 tsp sea salt
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1/4 tsp onion powder
  • 1 tsp garlic powder
  • 2 pounds ground beef 20-30% fat or pork
  • 1/2 cup white vinegar
  • 2 tbsp water
  • 2 tsp olive oil

Instructions
 

  • In a large bowl, place all spices and mix thoroughly. Add meat, vinegar, oil, and water to the bowl with spices.
  • Using your hands, mix until all ingredients are combined.
  • Refrigerate in an airtight container for up to 4 days, or freeze in airtight freezer bags for up to 3 months.
