Homemade Mexican Chorizo Recipe

A mildly hot, and very delicious, Mexican sausage. Excellent for breakfast, lunch, or dinner.

- 5 tbsp smoked paprika
- 2 tbsp ancho chile powder
- 1 tbsp ground cumin
- 2 tbsp chili powder
- 2 tsp Mexican oregano dried
- 1 tsp sea salt
- 1/8 tsp ground cinnamon
- 1/8 tsp ground cloves
- 1/4 tsp onion powder
- 1 tsp garlic powder
- 2 pounds ground beef 20-30% fat or pork
- 1/2 cup white vinegar
- 2 tbsp water
- 2 tsp olive oil
In a large bowl, place all spices and mix thoroughly. Add meat, vinegar, oil, and water to the bowl with spices.
Using your hands, mix until all ingredients are combined.
Refrigerate in an airtight container for up to 4 days, or freeze in airtight freezer bags for up to 3 months.
