Huevos Rancheros

Huevos rancheros are fried eggs served on top of a corn tortilla smothered with beans and warm salsa.

- 4 eggs
- 4 corn tortillas
- 1 cup salsa ranchera
- 1 can 15-oz. refried beans, or homemade beans
- Salt and Pepper to taste
- Oil to brush tortillas
- Optional: avocado slices sliced jalapeños
Heat up refried beans, set aside
Heat 1 tbsp. oil in a 12″ nonstick skillet over medium-high heat, add corn tortillas, and fry for 5 seconds on each side.
For each corn tortilla, place 2 tablespoons of warm beans and spread, then spread some warm salsa ranchera.
Fry eggs and place on top of salsa.
Salt and pepper to taste
Top with avocado slices, or crumbled queso fresco.
