Huevos Rancheros

Huevos rancheros are fried eggs served on top of a corn tortilla smothered with beans and warm salsa.

Ingredients
  

  • 4 eggs
  • 4 corn tortillas
  • 1 cup salsa ranchera
  • 1 can 15-oz. refried beans, or homemade beans
  • Salt and Pepper to taste
  • Oil to brush tortillas
  • Optional: avocado slices sliced jalapeños

Instructions
 

  • Heat up refried beans, set aside
  • Heat 1 tbsp. oil in a 12″ nonstick skillet over medium-high heat, add corn tortillas, and fry for 5 seconds on each side.
  • For each corn tortilla, place 2 tablespoons of warm beans and spread, then spread some warm salsa ranchera.
  • Fry eggs and place on top of salsa.
  • Salt and pepper to taste
  • Top with avocado slices, or crumbled queso fresco.
