- 3 tbsp olive oil
- 2 cloves garlic minced
- 4 cups cauliflower rice fresh or frozen
- 1/2 medium Lime juice
- 1 tsp salt
- 1/2 cup cilantro chopped
Heat olive oil in a skillet over medium heat and add minced garlic.
Cook until fragrant, about 30 seconds.
Add the cauliflower, cilantro, and lime juice, then season with salt to taste.
Cook until beginning to brown a little, about 5-8 minutes.Serve with more fresh cilantro.
