Mock Guacamole shakes up the game with zucchini or Mexican squash, tomatillos, cilantro, garlic, and jalapeño at its core, creating a distinctive and revitalizing flavor that will have your taste buds craving more.
2smallMexican squash or 1 large zucchini,ends trimmed and quartered
3tomatillos
3jalapeños or serranos( spicy)stem removed
½cupcilantro leaves
½cupsliced white onions
2clovesgarlic
1tspsalt
4 tbspolive oil, or canola oil
3cupswater
Instructions
On medium heat, add to skillet 2 tbsp of oil, garlic, and onion. Heat to medium. Stir now and then when the ingredients begin to sizzle and become aromatic. Cook 2 -3 minutes.
In a pot place squash, peppers, tomatillos, add enough water to cover. Turn the stove on medium heat. Let cook for 15 minutes or until tender.
Once cooked, remove the pot from the hot burner. Let cool for 15-20 minutes.
In a blender, drain water, and place all contents from the pot. Add onion, garlic, 2 tbsp of oil, and salt. Blend for 30 seconds.
Add cilantro, and blend for 10-15 additional seconds.
