Ingredients
  

  • 2 small Mexican squash or 1 large zucchini, ends trimmed and quartered
  • 3 tomatillos
  • 3 jalapeños or serranos( spicy) stem removed
  • ½ cup cilantro leaves
  • ½ cup sliced white onions
  • 2 cloves garlic
  • 1 tsp salt
  • 4 tbsp olive oil, or canola oil
  • 3 cups water

Instructions
 

  • On medium heat, add to skillet 2 tbsp of oil, garlic, and onion. Heat to medium. Stir now and then when the ingredients begin to sizzle and become aromatic. Cook 2 -3 minutes.
  • In a pot place squash, peppers, tomatillos, add enough water to cover. Turn the stove on medium heat. Let cook for 15 minutes or until tender.
  • Once cooked, remove the pot from the hot burner. Let cool for 15-20 minutes.
  • In a blender, drain water, and place all contents from the pot. Add onion, garlic, 2 tbsp of oil, and salt. Blend for 30 seconds.
  • Add cilantro, and blend for 10-15 additional seconds.
  • Transfer into a bowl. Enjoy!
