6ouncesMexican pork or beef chorizo ( vegetarians can
use soy chorizo)
1 4oz.can dice green chiledrained
1jalapeñostemmed, seeded, and diced
1/2small onionfinely diced
6ouncesMonterey Jack cheesegrated
6ouncesOaxaca or Asadero cheesegrated
Tortilla chips or flour tortillas
Pico de Gallooptional
Instructions
Preheat oven to 375° F
In a medium skillet, cook the chorizo over medium heat, breaking it up as it cooks, until completely browned. Remove with a slotted spoon to a paper towel-lined plate to drain.
Pour off all but 1 tablespoon of the grease and add the onion, and jalapeños to the pan, and cook over medium heat until softened for about 5 minutes. Remove from the heat and add the chorizo and diced green chiles to the skillet, stirring to combine with the onion mixture.
Place the chorizo mixture in an oven-proof dish or cast-iron skillet, setting aside 2 tablespoons to garnish when ready to serve.
Place the grated cheese over the chorizo and bake for about 10-12 minutes or until the cheese is melted and bubbling. Do not overcook or it will have a chewy texture.
