Queso Fundido Con Chorizo

Queso Fundido con chorizo, you just throw some cheese, jalapeños, and cooked chorizo into a skillet, pop it into the oven for a few minutes and you have an oozing, satisfying snack.

Ingredients
  

  • 6 ounces Mexican pork or beef chorizo ( vegetarians can
  • use soy chorizo)
  • 1 4 oz. can dice green chile drained
  • 1 jalapeño stemmed, seeded, and diced
  • 1/2 small onion finely diced
  • 6 ounces Monterey Jack cheese grated
  • 6 ounces Oaxaca or Asadero cheese grated
  • Tortilla chips or flour tortillas
  • Pico de Gallo optional

Instructions
 

  • Preheat oven to 375° F
  • In a medium skillet, cook the chorizo over medium heat, breaking it up as it cooks, until completely browned. Remove with a slotted spoon to a paper towel-lined plate to drain.
  • Pour off all but 1 tablespoon of the grease and add the onion, and jalapeños to the pan, and cook over medium heat until softened for about 5 minutes. Remove from the heat and add the chorizo and diced green chiles to the skillet, stirring to combine with the onion mixture.
  • Place the chorizo mixture in an oven-proof dish or cast-iron skillet, setting aside 2 tablespoons to garnish when ready to serve.
  • Place the grated cheese over the chorizo and bake for about 10-12 minutes or until the cheese is melted and bubbling. Do not overcook or it will have a chewy texture.
