Pork Posole is basically a cross between a soup and a stew and is popular around the country with its red delicious chile broth.

- 1 tablespoon vegetable oil
- 2 lbs. boneless pork butt roast cut into 1-inch cubes
- 2 cans 14.5 Red Chile sauce or Homemade Red Chile Sauce
- 1 onion coarsely chopped
- 2 cans 4 oz. diced green chiles
- 4 tsp. minced garlic
- 2 tsp dried Mexican oregano
- 1/4 cup cilantro chopped
- 1/2 tsp. ground cumin
- 1 tsp. salt plus salt to taste
- 2 cans 15.5 oz Mexican White Hominy, rinsed & drained
Heat the oil in a skillet over high heat. Add meat and brown pork cubes on all sides for around 3 - 4 minutes.
In a 5 quart slow cooker, add the browned meat and all ingredients except cilantro.
Cook on High for 4 - 6 hours or until the pork is tender
Garnishes: Chopped cilantro, sliced radishes, thinly sliced cabbage, sliced avocados, or diced green onions
