Red Chile Posole / Posole Rojo - Slow Cooker

Ingredients
  

  • 1 tablespoon vegetable oil
  • 2 lbs. boneless pork butt roast cut into 1-inch cubes
  • 2 cans 14.5 Red Chile sauce or Homemade Red Chile Sauce
  • 1 onion coarsely chopped
  • 2 cans 4 oz. diced green chiles
  • 4 tsp. minced garlic
  • 2 tsp dried Mexican oregano
  • 1/4 cup cilantro chopped
  • 1/2 tsp. ground cumin
  • 1 tsp. salt plus salt to taste
  • 2 cans 15.5 oz Mexican White Hominy, rinsed & drained

Instructions
 

  • Heat the oil in a skillet over high heat. Add meat and brown pork cubes on all sides for around 3 - 4 minutes.
  • In a 5 quart slow cooker, add the browned meat and all ingredients except cilantro.
  • Cook on High for 4 - 6 hours or until the pork is tender
  • Garnishes: Chopped cilantro, sliced radishes, thinly sliced cabbage, sliced avocados, or diced green onions
