Tomatillo-Chipotle Salsa

This easy-to-make tomatillo-chipotle salsa recipe is a breeze to make for any occasion. One of the most classic salsas in Mexico, this blend of smoky-spicy chipotle and roasted tomatillos plus garlic...the perfect combination.

Ingredients
  

  • 8 tomatillos husked and rinsed
  • 2 - 4 chipotles in adobo sauce seeds removed ( 4 will be spicy)
  • 3 - 4 garlic cloves unpeeled
  • 1/2 teaspoon salt or to taste.

Instructions
 

  • Remove paper husk from tomatillos*, and rinse thoroughly
  • Roast tomatillos and unpeeled garlic at 400° F for 15 - 20 minutes.
  • Add chipotle peppers, roasted tomatillos, roasted garlic cloves, and salt to a blender or food processor and blend.
  • Add water to make salsa thinner if desired. Salt to taste. Enjoy!
