It’s a traditional Mexican beef stew with cumin, chili powder, jalapenos, and potatoes. This delectable dish is known as Carne Guisada con Papas, translating to stewed meat with potatoes. I love this with rice and beans, it’s my comfort food. Carne Guisada is a delicious and easy dish to make for any occasion, or family gatherings.

Origin of Carne Guisada
The history of Carne Guisada con Papas can be traced back to the Moorish influence in Spain during the 8th century. The Moors introduced the concept of stewing meat with vegetables and spices, and this cooking technique was then adopted by the Spanish. The dish made its way to Latin America through Spanish colonization and has since evolved to include local ingredients and flavors.
One of the key components of Carne Guisada con Papas is the meat. Traditionally, beef is used, but some variations also use pork or chicken. The meat is usually cut into bite-sized pieces and marinated with spices such as cumin, oregano, and garlic. This allows the meat to absorb the flavors and become tender when cooked.

Ingredients:

- Chile Pepper – Jalapeño or Serrano (spicy)
- Cilantro – leaves only
- Garlic – cloves
- Spices – Ground cumin, black pepper, chili powder
- Beef broth

How to make Carne Guisada
- The basic ingredients for Carne Guisada are meat, tomatoes, onions, peppers, and seasonings. Different recipe versions add carrots, green bell peppers, tomato sauce, and vinegar, all are scrumptious.
- In this recipe, slow-cooked chunks of lean beef are simmered with fresh tomatoes, bell pepper, onion, garlic, and Mexican seasonings to make rich spicy gravy.
- In a large skillet, heat oil over medium-high heat. Add cooked meat and onions; sauté for 5 minutes.
- Add tomatoes to the meat and onion mixture, then mash tomatoes in the skillet, this will help create a gravy ( you can add some tomato sauce for a thicker gravy)
- Combine broth, potatoes, cilantro, bell pepper, jalapeño, and spices with the meat over medium-high heat for 10 minutes. Lower heat, cover, and simmer for 20 minutes or until potatoes and beef are tender.

How to serve Carne Guisada con Papas(potatoes)
Rice, beans, and flour tortillas commonly accompany Carne Guisada.
Carne Guisada can also be a great filling for a burrito, taco, or chimichanga, or a filling for Chile Relleno.
Storing:
Store in an airtight container in the fridge for up to 5 days.
Tip: Instant Pot is an alternative for cooking beef stew meat. Cook for 40 minutes for 2 lbs of meat.

Carne Guisada con Papas (Mexican Beef Stew with Potatoes)
Ingredients
- 2 lbs. lean beef stew meat
- 2 potatoes peeled and cubed
- 3 Roma tomatoes cubed
- 3 garlic cloves
- 1 red bell pepper seeded and chopped
- 1 jalapeño seeded and diced
- 1 medium onion diced
- 1 tsp. ground cumin
- 4 cups of beef broth
- 1 tbsp chile powder
- 1/4 tsp black pepper
- 2 tbsp cilantro minced
Instructions
- Add meat, 1 cup of water, and garlic to slow-cooker, cook on high for 2 hours
- Add 2 tablespoons olive oil and saute onions for 5 minutes in a large skillet on medium heat
- Remove the meat mixture from the slow cooker, and add to the skillet with onions, after 5 minutes add tomatoes. Mash tomatoes in the skillet.
- Add broth, potatoes, cilantro, bell pepper, jalapeño, and spices to meat on medium-high heat for 10 minutes.
- Lower heat, cover, and simmer for 20 minutes or until potatoes and beef are tender.
- Season to taste with salt and pepper
