Onions – white or yellow onion
Garlic – fresh clove minced
Salsa – Tomatillo salsa verde (store-bought or homemade)
Broth – Chicken or vegetable broth
Oil – Vegetable oil, canola oil, or olive oil
Spices – Cumin, salt, and pepper
Optional veggies – carrots, or diced tomatoes
How to Make Green Chile Pork Stew
- Start with Pork loin cut into cubes, brown the pork in the vegetable oil in a Dutch oven, then remove and drain.
- Add the onions, and garlic to the oil and sauté until soft.
- Place all the ingredients in a Dutch oven and simmer for 2 hours, or until the meat is very tender and starts to fall apart.

- 1/2 white onion diced
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1 cup tomatillo salsa verde store-bought or homemade
- 2 cups vegetable broth
- 2 tablespoons vegetable oil
Instructions
- Brown the pork in the vegetable oil in a dutch oven, then remove and drain. Add the onion and garlic to the oil and sauté until soft.
