Ingredients in This Pork Stew

Pork – The best cuts for this recipe are pork loin, pork shoulder, or pork tenderloin

Potatoes – Russet, or yellow (gold) are the best choices

Onions – white or yellow onion

Garlic – fresh clove minced

Salsa – Tomatillo salsa verde (store-bought or homemade)

Broth – Chicken or vegetable broth

Oil – Vegetable oil, canola oil, or olive oil

Spices – Cumin, salt, and pepper

Optional veggies – carrots, or diced tomatoes



How to Make Green Chile Pork Stew

  • Start with Pork loin cut into cubes, brown the pork in the vegetable oil in a Dutch oven, then remove and drain. 
  • Add the onions, and garlic to the oil and sauté until soft.
  • Place all the ingredients in a Dutch oven and simmer for 2 hours, or until the meat is very tender and starts to fall apart.

The longer you simmer, the better this stew gets. If you want to dress up this hearty stew, offer bowls of cotija cheese, chopped green onions, cilantro, avocado slices, lime wedges, and flour tortillas 

Slow-Cooker Instructions
  • Start with Pork loin cut into cubes, brown the pork, onion, and garlic in the vegetable oil for 5 minutes in a skillet. Transfer pork, onions, garlic, and remaining ingredients to the slow cooker on low (6-8 hours) or high (4-6 hours). Cook until the meat is tender and starts to fall apart.

How to Store Green Chile Pork Stew

Refrigerate: Leftover green chile pork will keep in the fridge for about 4 days in an airtight container. Reheat on the stovetop or in the microwave.

Freeze prepared and cooled Green Chile Stew in a freezer-safe container allowing ½-inch head space on top for expansion. Thaw in the fridge and eat within 3 months.

  • 2 cups vegetable broth
  • 2 tablespoons vegetable oil

Instructions
 

  • Brown the pork in the vegetable oil in a dutch oven, then remove and drain. Add the onion and garlic to the oil and sauté until soft.
  • Place all the ingredients in a dutch oven and simmer for 2 hours, or until the meat is very tender and starts to fall apart.
