Hey there! Did you know that the word “flauta” means flute in Spanish? It’s named after its long, narrow shape that resembles a flute. This delicious dish originated in Mexico. It all started when some indigenous tribes decided to cook the filling inside the tortilla instead of separately. This way, they created a mouthwatering combination of flavors and textures in every bite. Amazing, right?



  • Cream cheese – full-fat cream cheese, softened
  • Chicken – Rotisserie chicken, shredded, or homemade shredded
  • Green Chiles – Can diced green chiles, or diced jalapenos for heat
  • Spices – Ground cumin, onion powder, and garlic powder
  • Tortillas – Keto-certified tortillas: Mission Zero net carb tortillas, Mission Carb Balance, or Guerrero zero net carbs.


  • Preheat the oven to 350°F. Grease a rimmed baking sheet, then set aside.
  • Mix the shredded chicken, cream cheese, diced green chiles, and spices in a large bowl.
  • Place about 3 tablespoons of the chicken filling in the middle of the tortilla.
  • Bake flautas for 15 – 20 minutes, or until crispy. Top with your favorite toppings, and serve with cilantro lime rice

Leftover Chicken Flautas can be stored in an airtight container in the refrigerator for 3-4 days. To warm them up, you can use an oven, toaster oven, air fryer, or microwave.

Ingredients
  

  • ½ cup (4 oz) cream cheese softened
  • 3 cups shredded deli rotisserie chicken, or homemade shredded chicken.
  • ½ cup Monterey Jack cheese, shredded
  • 1 (4 oz. can) green chiles
  • ¼ tsp cumin
  • ¼ tsp onion powder
  • tsp garlic powder
  • 10 Keto tortillas ( I use Mission Zero net carbs tortillas)

Instructions
 

  • Preheat the oven to 350°F . Grease a rimmed baking sheet, then set aside.
  • In a large mixing bowl, mix together the shredded chicken, cream cheese, diced green chiles, and spices.
  • Place about 3 tablespoons of the chicken filling in the middle of the tortilla. (Toothpick can be used to secure tortilla)
  • Roll tightly, then place seam-side down on the prepared baking tray. Repeat with the remaining filling and tortillas.
  • Bake flautas for 15 – 20 minutes, or until crispy.
  • Garnish with your favorite toppings such as: salsa, guacamole, fat free sour cream, cilantro, or salsa.

Notes

  • diced jalapeños can replace diced green chiles
  • leftover turkey can replace chicken
