It all started when some indigenous tribes decided to cook the filling inside the tortilla instead of separately. This way, they created a mouthwatering combination of flavors and textures in every bite. Amazing, right?
Chicken Flautas Ingredients:
- Cream cheese – full-fat cream cheese, softened
- Chicken – Rotisserie chicken, shredded, or homemade shredded
- Green Chiles – Can diced green chiles, or diced jalapenos for heat
- Spices – Ground cumin, onion powder, and garlic powder
- Tortillas – Keto-certified tortillas: Mission Zero net carb tortillas, Mission Carb Balance, or Guerrero zero net carbs.
Instructions for Keto Chicken Flautas
- Preheat the oven to 350°F. Grease a rimmed baking sheet, then set aside.
- Mix the shredded chicken, cream cheese, diced green chiles, and spices in a large bowl.
- Place about 3 tablespoons of the chicken filling in the middle of the tortilla.
- Roll tightly, then place seam-side down on the prepared baking tray. Repeat with the remaining filling and tortillas. (you can secure it with a toothpick)
- Bake flautas for 15 – 20 minutes, or until crispy. Top with your favorite toppings, and serve with cilantro lime rice

- 1 baking sheet
Ingredients
- ½ cup (4 oz) cream cheese softened
- 3 cups shredded deli rotisserie chicken, or homemade shredded chicken.
- ½ cup Monterey Jack cheese, shredded
- 1 (4 oz. can) green chiles
- ¼ tsp cumin
- ¼ tsp onion powder
- ⅛ tsp garlic powder
- 10 Keto tortillas ( I use Mission Zero net carbs tortillas)
Instructions
- Preheat the oven to 350°F . Grease a rimmed baking sheet, then set aside.
- In a large mixing bowl, mix together the shredded chicken, cream cheese, diced green chiles, and spices.
- Place about 3 tablespoons of the chicken filling in the middle of the tortilla. (Toothpick can be used to secure tortilla)
- Roll tightly, then place seam-side down on the prepared baking tray. Repeat with the remaining filling and tortillas.
- Bake flautas for 15 – 20 minutes, or until crispy.
- Garnish with your favorite toppings such as: salsa, guacamole, fat free sour cream, cilantro, or salsa.
Notes
- diced jalapeños can replace diced green chiles
- leftover turkey can replace chicken
