What are Mantecadas?

The original Mantecadas originate from Spain. They are small sweetened loaf cakes made with flour, butter, sugar, eggs, and yeast. They are often sprinkled with sugar on top before baking to give them a nice, crackly top.

The Azteca Mantecadas are the Mexican variation of the original. In Mexico, butter wasn’t always available or was too expensive, so they often used oil in their baking. They also added a bit of readily available citrus to the recipe.

Mantecada muffins belong to the family of pan dulce. Pan dulce, which translates to “sweet bread,” encompasses a range of Mexican pastries. These affordable delicacies are enjoyed during breakfast, brunch, or dinner.

Ingredients In This Mantecadas Recipe

  • Eggs – 4 large eggs
  • Flour – all-purpose flour
  • Baking Powder
  • Salt
  • ExtractOrange extract or vanilla extract
  • Orange zest – 1 tablespoon
  • Oil – vegetable oil or canola oil
  • Milk – whole milk

How To Make This Mantecadas Recipe

  • Heat the oven to 400°F and line a muffin tin with liners. Give the muffin liners a quick vegetable oil spray.
  • In a large bowl, beat the eggs, sugar, oil, milk, orange extracts, and orange zest, together until well combined
  • Whisk the flour, baking powder, and salt in a small bowl. Then mix the flour into the egg mixture, until well combined.
  • Fill the muffin liners 3/4th full.
  • Place the pan in the oven and bake for 20 minutes, until baked through and a toothpick comes out clean or with moist crumbs. Serve warm or allow to cool and serve.

Storing

Store Mantecadas in an airtight container at room temperature for 3 days or in the refrigerator for up to a week.
