I’ve been busy creating new dishes, but this Mexican cucumber tomato salad has truly impressed me! It’s fast, invigorating, and a summer favorite, yet let’s not forget, it’s also perfect for winter post-holiday meals!
What’s in Mexican Cucumber Tomato Salad
Cucumbers – I prefer to peel cucumbers unless I use English cucumbers
Tomatoes – When making this recipe, I typically use plum or cherry tomatoes.
Onions – use red onions, which have a milder taste, or white onions have a little bite.
Cilantro – Fresh and diced
Cotija cheese – Queso fresco or feta cheese can replace cotija cheese
Vinaigrette Dressing
Red Wine Vinegar – Red wine vinegar can be substituted by white or balsamic vinegar.
Olive Oil – Vegetable oil or sunflower oil can substitute for olive oil
Mexican Oregano – Marjoram is a great substitute if Mexican oregano is not available.
Crushed Red Peppers -(optional) Commonly made from crushing dried cayenne peppers.
Salt and Pepper

Putting the Cucumber Tomato Salad together
- In a medium bowl, add the tomatoes, cucumbers, cilantro, and onions and toss.
- In a measuring cup or a bowl, stir together the olive oil, red wine vinegar, garlic powder, Mexican oregano, crushed red peppers, salt, and pepper.
- Pour the vinaigrette over the cucumbers, tomatoes, cilantro, and onions, and let marinate. Allow this salad to sit for as long as an hour for the flavors to blend.

- Roasted corn
- Black olives
- Sliced avocados
How long can I store Cucumber Tomato Salad?
Cucumber tomato salad with cotija cheese can be served immediately or stored in the fridge, covered for up to 2 days.

Cucumber Tomato Salad with Cotija Cheese
Ingredients
- 3 plum tomatoes diced
- 1 large cucumber sliced and quartered
- 2 tablespoons cilantro chopped
- 1/2 red onion diced
- 1/2 cup cotija crumbled
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 tsp garlic powder
- 1/2 tsp Mexican oregano
- 1/2 tsp crushed red peppers
- Salt and Pepper to taste
Instructions
- In a medium bowl, add the tomatoes, cucumbers, cilantro, and onions and toss.
