Ingredients in Mexican Molletes:
•Type of Beans: refried pinto or black beans
•Cheese: Quesadilla, Monterey Jack, Mozzarella, or Provolone
•Bread: Bollilo rolls, Mini baguettes, or Telera rolls
How To Make Molletes
Preheat oven to 350° F. Line a rimmed baking sheet with parchment paper.
Remove some of the bread from the middle of the halves to accommodate more toppings. Spread about 1 teaspoon of butter on each half. Place in oven for 5-7 minutes. Remove from oven.
Spread 2 to 3 tablespoons warmed refried beans on bread. Sprinkle about 4 tablespoons of Monterey Jack or Pepper Jack shredded cheese on the beans. Place bread halves on the prepared baking sheet.
Bake the Molletes in the preheated oven until the cheese is melted and bubbly and the bread is crispy about 7 to 10 minutes. Top with your favorite toppings.
