Cheese lovers, brace yourselves for Queso Fundido con Chorizo, aka the flaming cheese feast! Picture this: gooey white cheese, spicy jalapeños, and sizzling chorizo hanging out in a skillet, getting all melty in the oven. It’s a bubbling, mouthwatering delight that’s just a few minutes away from cheesy perfection!

The cheesy goodness of queso fundido is hard to beat. Queso Fundido translation is “melted cheese” for cheese lovers this dish is “perfection“.

Queso Fundido with Chorizo


Queso Fundido allegedly hails from the fiery hearths of northern Mexico and the wild west of the United States, born as a sizzling campfire treat. While the classic recipe calls for Asadero, Manchego, or Chihuahua cheese down in Mexico, feel free to mix it up with Monterey Jack, Mozzarella, or Oaxaca cheese for a twist!

We like to make tacos out of this recipe, but you can also serve it dip-style with chips if you like. Queso fundido is a classic Mexican appetizer that can be eaten with warm tortillas or tortilla chips.

Our Queso Fundido recipe includes:

  • Mexican Chorizo – Pork, or Beef, (soy chorizo for meat-free)
  • Cheese – Monterey Jack, and Oaxaca 
  • Chiles– Green chiles and jalapeño are what I use for this recipe, but poblano strips (rajas) are what I use for Queso Fundido tacos.
  • Onion– A white onion is what I recommend, but a red onion can be used

Here are a few types of cheese we recommend for making Queso Fundido (any combination will work):

  • Queso Asadero
  • Chihuahua
  • Panela
  • Mozzarella
  • Queso Quesadilla

  How do you Make Queso Fundido Con Chorizo:

  • In a medium skillet, cook the chorizo over medium heat, breaking it up as it cooks, until completely browned. Remove with a slotted spoon to a paper towel-lined plate to drain.
  • Pour off all but 1 tablespoon of the grease and add the onion, and jalapeños to the pan, and cook over medium heat until softened for about 5 minutes. Remove from the heat and add the chorizo and diced green chiles to the pan, stirring to combine with the onion mixture.
  • Place the chorizo mixture in an oven-proof dish or cast-iron skillet, setting aside 2 tablespoons to garnish when ready to serve.
  • Sprinkle the grated cheese over the chorizo and bake for 10-12 minutes, or until the cheese is melted and bubbly. Do not overcook or it will have a chewy texture.

Ingredients
  

  • 6 ounces Mexican pork or beef chorizo ( vegetarians can
  • use soy chorizo)
  • 1 4 oz. can dice green chile drained
  • 1 jalapeño stemmed, seeded, and diced
  • 1/2 small onion finely diced
  • 6 ounces Monterey Jack cheese grated
  • 6 ounces Oaxaca or Asadero cheese grated
  • Tortilla chips or flour tortillas
  • Pico de Gallo optional

Instructions
