  • Shrimp –  Medium size shrimp, cooked
  • Vegetables – Plum tomatoes, jalapeños, white or red onions, avocados, cucumbers, and chopped cilantro
  • Juice – Lime, lemon, and orange. Fresh squeezed, not from bottle.

Tip – (Fresh squeezed juice) 1/4 cup = 2 lemons, 1/4 cup = 2-3 limes, 1/4 cup = 1 orange



  • Place cooked shrimp in a glass bowl and cover with lime juice to marinate for about 10 minutes
  • Place the plum tomatoes, onion, diced cucumber, and jalapeños in a large (stainless steel, glass, or plastic) bowl. ( Avocado cubes are added right before serving ceviche)

  • Remove shrimp from lime juice, reserving juice. Dice shrimp* and add to the bowl of vegetables ( not avocado).
  • Pour in the remaining lime juice marinade. Add cilantro and salt and pepper to taste. Toss gently to mix. Cover and chill for 2 hours. When ready to serve add avocado cubes to ceviche. Enjoy!

*Tip – You can leave the shrimp whole or cut them in half instead of dicing them. If you’re having it with tortilla chips, it’s better to dice them. But if you’re topping your tostada shell, you might prefer to use whole shrimp.

Ingredients
  

  • 2 pound cooked medium shrimp
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 1/4 cup lemon juice
  • 5 medium plum tomatoes diced
  • 1/2 large red onion diced
  • 1 cup cucumber peeled and diced
  • 1 jalapeño seeded and diced ( or serrano for spiciness)
  • 1 avocados cubed
  • Chopped fresh cilantro to taste.
  • Salt & pepper to taste.

Instructions
 

  • Place shrimp in a glass bowl and cover with lime juice to marinate for about 10 minutes
  • Place the plum tomatoes, onion, diced cucumber, and jalapeños in a large (stainless steel, glass, or plastic) bowl.
  • Remove shrimp from lime juice, reserving juice. Dice shrimp and add to the bowl of vegetables. Pour in the remaining lime juice marinade. Add cilantro and salt and pepper to taste. Toss gently to mix. Cover and chill for 2 hours. Add avocado cubes before serving.
