For This Recipe You Will Need:

Peppers: You can use fewer Chipotle peppers in Adobo Sauce for less heat.

Honey: 1/4 cup dark brown sugar can also be used instead of honey.

Garlic: Fresh garlic is key to a great marinade. Use freshly minced garlic or a garlic press to extract the maximum flavor from the garlic.

Salt: Fine grained Sea salt or kosher salt is easier to dissolve into other liquids and less likely to settle out.

Cooking Oil: This is the foundation of your marinade; use it to set the tone of your desired flavor profile. Canola oil + olive oil is considered best choice for marinades

Chicken: Chicken thighs, chicken wings, breast, or chicken drumsticks

How to Make Spicy Chipotle Chicken

  • Place the first 5 ingredients into the blender or small food processor and puree for a few moments. Pour the marinade over the chicken in an airtight container or large ziplock bag and shake to coat each of the pieces.
  • Marinate for 4 hours or overnight in the refrigerator.
  • Grill chicken or oven bake till the internal temperature of 165 degrees

Let it rest 5-10 mins before serving. Serve with your favorite side, or cut into bite-size pieces for tacos, burritos, or rice bowls

To store cooked chicken in the fridge, make sure to refrigerate it within 2 hours of cooling down to room temperature. Keep the leftover chicken in an airtight container and store it in the refrigerator at a temperature of 40° F or less. This will help keep it fresh and safe to eat for a longer period of time.

  • 3 chipotle peppers in adobo sauce + 3 tbsp of adobo sauce
  • 1 tablespoon minced garlic
  • 1 tbsp lime juice
  • 3 tablespoons olive oil
  • 4 tablespoons honey
  • 1 teaspoon salt
  • 2 pounds about 8 boneless, skinless chicken thighs, or (6) bone-in chicken thighs
