Ingredients for Baked Chicken Taquitos
- Rotisserie Chicken or Homemade baked chicken, shredded ( approx. 2.5 cups) Leftover shredded turkey can be used.

- Jalapeño(spicy)(optional) diced
- Mexican blend cheese,
- Cream cheese, soften
- Garlic Powder
- Favorite store-bought salsa, or Homemade salsa (mild for kids)
- Corn tortillas
Easy to make Instructions
🞺 Mix chicken, cheese, cream cheese garlic powder, jalapeño, and salsa in a bowl.
🞺Brush corn tortillas on each side with slightly warm cooking oil, then fill with chicken mixture. Carefully* roll the corn tortilla with filling and place a toothpick to hold it together.
🞺How to soften corn tortillas – wrap a few tortillas in wet paper towels. Then microwave them on HIGH for about 15-20 seconds. This basically steams the tortillas and make them really flexible.

🞺Place rolled taquitos in the oven for 10-15 minutes at 425°F. Remove from oven, and remove the toothpick. Serve with your favorite toppings, with rice and beans.

Storing & Freezing Taquitos
To freeze: Place cooled baked taquitos on a parchment-lined cookie sheet without touching each other. Then place the cookie sheet in the freezer. When taquitos are frozen remove them from the cookie sheet and add them all to a freezer-safe gallon-sized bag.
To reheat: Place taquitos in the oven for 10 minutes at 375°F, checking every few minutes until they’re warmed through.

Baked Chicken Taquitos
Ingredients
- 1 rotisserie chicken 2.5 cups, remove the meat from the bones and shred the meat.
- 1/2 cup salsa store-bought or homemade
- 1/2 cup shredded cheese Mexican blend
- 4 oz cream cheese softened
- 1 jalapeño seeded and diced (optional)
- 1/4 tsp garlic powder
- 16 corn tortillas
- Cooking oil
Instructions
- Mix the first 6 ingredients in a bowl.
- Preheat oven to 425°F. Spray or brush corn tortilla with cooking oil, place chicken mixture in corn tortillas, roll, and use a toothpick to hold the taquito close.
- Place in the oven for 10-15 minutes
- Top with guacamole, and lettuce, served with rice and beans. Enjoy!
