The name Migas(pronounced mee-guhz) means “crumbs” or perhaps “scraps.” You wouldn’t think that “scraps” could be so tasty but they are. Migas are the perfect way to use up corn tortillas that might be going stale or old.

Tex-Mex Migas
Tex-Mex style Migas may have diced tomato, bell peppers, diced onions, Monterey Jack cheese, and sliced chile peppers, mixed into the lightly beaten eggs. The egg mixture is then added to the fried corn tortilla strips cooked in the skillet, and topped with avocado slices or sour cream.
Mexican Migas
Mexican-style Migas is usually a breakfast meal with corn tortilla strips or pieces fried, then beaten eggs added to the skillet. Toppings are on the side, like pico de gallo, sour cream, or your favorite salsa. I prefer Mexican Migas because I have control of what’s in Migas for the sake of my younger grandkids and what I prefer on the side. Most of my grandkids love cheese as a topping.

Ingredients for Mexican Migas, You Will need:
Corn Tortillas: Cut into 1- 2 inch pieces. Thicker corn tortillas are better for Migas…it make for a heartier meal.
Eggs: Large or Extra-Large Eggs
Cooking Oil: Olive oil, or vegetable oil
Kosher salt- Adding salt to lightly beaten eggs can result in creamy scrambled eggs that are softer, lusher, and evenly seasoned
Optional toppings: sliced or diced jalapeños, queso fresco, diced green onions, salsa, shredded Monterey Jack cheese. 🌶
How To Make Mexican Migas
- Whisk eggs and lightly beat with 1/2 teaspoon of salt in a medium-sized bowl
- Add oil to a cast-iron skillet or other heavy-bottomed pans to medium heat.
- Fry tortillas in the oil until it is lightly brown and very crispy. Make sure to flip the tortillas so that both sides are browned.
- Reduce the skillet temperature to medium and pour in eggs to fried tortillas, cooked until no longer glossy
- Serve immediately, and serve with your favorite toppings
