Ingredients in Mock Guacamole
This easy mock guac made with squash only needs 9 ingredients that you can find easily. Here’s what you will need:
- Squash– Mexican squash is suggested, but if it’s not on hand, zucchini will work perfectly well in this recipe.
- Tomatillos– peeled and rinsed
- Chile Peppers– jalapeños, or serrano for more spiciness
- Cilantro– cilantro leaves
- Onions– sliced white onions
- Garlic- garlic cloves
- Salt
- Cooking Oil– olive oil or vegetable oil
- Water
How to make this Recipe

- On medium heat, add to skillet 2 tbsp of oil, garlic, and onion. Heat to medium. Stir occasionally once the ingredients start to sizzle and release their aroma. Cook for 2-3 minutes.

- In a pot place squash, peppers, and tomatillos, add enough water to cover. Turn the stove on to medium heat. Let cook for 15 minutes or until tender.

- Once cooked, remove the pot from the hot burner. Let cool for 15-20 minutes.
- In a blender, drain and place all contents from the pot. Add onion, garlic, 2 tbsp of oil, and salt. Blend for 30 seconds.

- Add cilantro, and blend for 10-15 additional seconds.
- Transfer into a bowl. Enjoy!

Store in an airtight container in the fridge for up to one week. This salsa can be frozen in an airtight container for up to 3 months

Ingredients
- 2 small Mexican squash or 1 large zucchini, ends trimmed and quartered
- 3 tomatillos
- 3 jalapeños or serranos( spicy) stem removed
- ½ cup cilantro leaves
- ½ cup sliced white onions
- 2 cloves garlic
- 1 tsp salt
- 4 tbsp olive oil, or canola oil
- 3 cups water
Instructions
