Ingredients in Mock Guacamole

This easy mock guac made with squash only needs 9 ingredients that you can find easily. Here’s what you will need:

  • Squash– Mexican squash is suggested, but if it’s not on hand, zucchini will work perfectly well in this recipe.
  • Tomatillos– peeled and rinsed
  • Chile Peppers– jalapeños, or serrano for more spiciness
  • Cilantro– cilantro leaves
  • Onions– sliced white onions
  • Garlic- garlic cloves
  • Salt
  • Cooking Oil– olive oil or vegetable oil
  • Water

How to make this Recipe

  • On medium heat, add to skillet 2 tbsp of oil, garlic, and onion. Heat to medium. Stir occasionally once the ingredients start to sizzle and release their aroma. Cook for 2-3 minutes.

  • In a pot place squash, peppers, and tomatillos, add enough water to cover. Turn the stove on to medium heat. Let cook for 15 minutes or until tender.
  • Once cooked, remove the pot from the hot burner. Let cool for 15-20 minutes.
  • In a blender, drain and place all contents from the pot. Add onion, garlic, 2 tbsp of oil, and salt. Blend for 30 seconds.
  • Add cilantro, and blend for 10-15 additional seconds.
  • Transfer into a bowl. Enjoy!

Storing

Store in an airtight container in the fridge for up to one week. This salsa can be frozen in an airtight container for up to 3 months

Instructions
