Plus, you can make a large quantity of the filling and use it as leftovers for other dishes throughout the week.



Chicken: Rotisserie chicken, or homemade leftover shredded chicken

Salsa: Store-bought mild, medium, or hot salsa are all suitable options; choose your preferred brand and level of spiciness. Homemade red salsa is a great option.

Seasonings: Cumin, chili powder, garlic and onion powder, and salt

Liquids: Olive oil or vegetable oil

Tortilla: Corn tortillas or flour tortillas (6-inch size)



  • Shred rotisserie chicken (makes about 3 cups)
  • In a skillet, heat oil on low and add cumin, onion and garlic powder, chili powder, and salt. Cook for 1 minute to combine. Add salsa, broth, and cook to warm through about 2-3 minutes.
  • Add the shredded chicken to the sauce. Simmer for 5-7 minutes. Salt to taste.
  • Warm corn or flour tortillas in a microwave for 10 seconds, or on a comal.
  • Take a couple of tablespoons of warm shredded chicken place it in a warm tortilla, and load it with your favorite toppings.

Ingredients
  

  • 3 cups shredded rotisserie chicken or home cooked shredded chicken
  • 1 cup salsa, store-bought or homemade mild, med, or hot
  • ¼ cup chicken broth
  • 2 tbsp olive oil
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • ¼ tsp salt
  • 12 corn tortillas

Containers of shredded rotisserie chicken are available at grocery deli counters, typically at Safeway and Albertsons.
