Sopita de Fideo: A Delicious Mexican Fideo Soup

 Sopita de Fideo, also called Sopa de Fideo, is a classic tomato-based noodle soup that is an essential dish in Mexican and Southwestern cooking. It complements a lunchtime sandwich or wrap beautifully, bringing a comforting and cozy element to your meal.

The rich culinary traditions that have been passed down through the generations can be enjoyed as a light lunch or a soothing dinner with this beloved soup. Its warming flavor and comforting aroma evoke a sense of nostalgia, transporting us to the dinner table of our childhood.

Mexican Fideo soup evokes nostalgic memories from my childhood, reminiscent of cherished dreams. It is a warm comforting soup made with an aromatic tomato base and golden brown noodles. I made this soup(Sopa) a lot, it’s inexpensive and quick, and my kids loved it. Sopa de Fideo is like a choose-your-own-adventure story – with or without cheese, but let’s be real, my fam is all about that cheesy goodness!

Usually, you can find Fideo pasta at your local grocery, but if not, use thin spaghetti and break it up.

Ingredients in Mexican Fideo Soup

  • Pasta: Fideo can be found in grocery stores in the Hispanic section or Mexican grocery stores. If you can’t find the fideo, use thin spaghetti and break it into 2-inch pieces.
  • Onion: White or yellow onions, diced
  • Garlic: Minced
  • Broth: Vegetable or chicken ( if you don’t have broth, just use water)
  • Tomatoes: Canned diced tomatoes or you can dice fresh tomatoes.
  • Cheese: I use Mexican blend shredded cheese, but Monterey Jack, Pepper Jack, Quesadilla, and Cheddar cheese, are all perfect for this soup.
  • Spices: Salt, ground cumin, black pepper
  • Cooking oil: vegetable oil, canola oil, or olive oil


How to make Mexican Fideo Soup

  • In a blender add cans of tomatoes…or you can also use roasted fresh tomatoes.
  • Add chopped onion, cumin, salt, pepper, and 2 cups of broth. Blend well and set aside.

  • Add the noodles to a large saucepan with a tablespoon of oil. Cook the noodles over medium heat for 3-5 minutes or until some of them are turning a light brown. Add the tomato-onion mixture to the saucepan and combine it well with the noodles.
  • Add remaining vegetable broth, bring the soup to a boil, and then reduce heat to a simmer and let it cook for 15-20 minutes, or until the noodles are cooked through. Add Mexican blend cheese, and cook for 5 minutes more.

Ingredients
  

  • 8 oz Fideo
  • 1 onion chopped
  • 1 tbsp garlic minced
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/8 tsp ground black pepper
  • 6 cups Vegetable Broth or Chicken broth
  • 2 14.5 oz Diced Tomatoes
  • 1 tbsp vegetable oil
  • 1/2 cup Mexican Blend shredded cheese
  • Optional: Crumbled Cotija Cheese lime wedges, avocado slices

Instructions
