What is Chorizo made of?
Mexican chorizo is typically made using ground pork, although ground beef can also be used as a substitute. This type of chorizo is created by mixing raw meat with a generous amount of dried chilies and fragrant spices, such as cinnamon and clove, resulting in a distinctive flavor that’s unique to Mexican cuisine.
A satisfying blend of spicy chorizo, crispy potatoes, and eggs cooked in a cast-iron skillet. This chorizo with eggs and potatoes recipe is an ideal breakfast option for a group or to prepare in advance for hectic mornings.
Ingredients for Chorizo with Potatoes & Eggs
- EGGS: 5 eggs, beaten
- ONIONS: white or yellow onions, 1/4 cup diced onions
- POTATOES: fresh cut potatoes cut into cubes, or 1 cup cubed frozen potatoes
- CHORIZO: 4 oz. chorizo, pork, beef, or soy chorizo( or homemade chorizo)
- OLIVE OIL 1 Tbsp olive oil
- GARLIC: minced garlic or a pinch of garlic powder
- Salt & Pepper to taste
Easy to make a Breakfast meal
- Start with cooking chorizo in a separate skillet, for approximately 8 minutes on medium-high heat.
- In a separate skillet cook onions until translucent, then add potatoes and cook until potatoes 10 – 15 minutes, or until fork tender. Add cooked chorizo, stir, and cook for 2 minutes together on medium heat

- Add beaten eggs and garlic powder. Let eggs set before stirring, and then cook eggs until done.

Breakfast Taco – Chorizo, potato & egg taco, topped with cheese and Mexican crema

Chorizo, Potato, and Egg
Ingredients
- 5 eggs beaten
- 1/4 cup diced onions
- 1 cup cubed frozen potatoes
- 4 oz. chorizo
- 1 tbsp olive oil
- pinch of garlic powder
- Salt & Pepper to taste
Instructions
- Saute onions in oil on medium-high heat until translucent. Add potatoes to onions.
- Cook chorizo in a separate skillet until cooked, approx 8 minutes. Add chorizo to onion potato mixture, stir and cook for 2 minutes. Add beaten eggs and garlic powder.
- Let eggs set on medium heat before stirring, and cook eggs until done.
- Serve with a tortilla, or make it into a burrito.
- Optional: sliced avocados, queso fresco
