Ingredients in Mexican Smoked Chile Marinade

Chipotles –  3 *chipotles chiles from adobo can + sauce, if you prefer some more spiciness 5 chipotle chiles can be used instead of 3.

Note: *Leftover chipotle chiles can be frozen in an airtight bag or container for future recipes.

Citrus – Orange zest. Oranges and Limes, recommended citrus fruits.

Seasonings – Salt, oregano, minced garlic, black pepper, and cumin

Vinegar – Red wine vinegar helps tenderize meat

Making the Mexican Smoked Chile Marinade

  1. Combine all ingredients in the blender, and puree until smooth.
  2. Makes enough marinade for 2 pounds of steak or pork. Place meat and marinade in a bowl to marinate for 2 to 4 hours.

Chicken or seafood needs less time to marinate, approximately 30 minutes for chicken and about 15 minutes for seafood.

  • 2 canned chipotle chiles in adobo stemmed, plus 1 teaspoon of sauce from the can
  • 6 oz. juice of fresh oranges
  • 2 oz. juice of limes
  • 1 tbsp. minced garlic
  • 1 tsp. salt
  • 2 tsp. oregano crushed
  • 1 tsp. black pepper
  • 2 tbsp. red wine vinegar
  • 1/2 tsp. ground cumin
